Moroccan meatballs
No need to defrost these meatballs – just cook straight from frozen
Serves 3-4
Ready in 35 minutes
1tbsp vegetable oil
336g pack Asda Frozen
12 Beef Meatballs
1 onion, sliced
1tsp ground cumin
1tsp ground coriander
½tsp turmeric
1 cinnamon stick
400g can Asda Chopped Tomatoes
300ml beef stock
150g Asda Ready To Eat Dried Apricots
couscous, chopped flat-leaf parsley and flaked almonds, to serve
1 Heat the oil in a large frying pan and add the meatballs. Cook for 4-5 minutes or until browned. Remove from the pan and add the onion. Cook for 3-4 minutes.
2 Add all the spices and the cinnamon stick, and cook for 1 minute, then stir in the tomatoes, stock and apricots. Bring to the boil and reduce the heat. Return the meatballs to the pan, season, then cover and simmer for 20-25 minutes or until the sauce has thickened and the meatballs are cooked through.
3 Serve with couscous garnished with parsley and flaked almonds.
